High protein chicken burrito bowls are one of the most
consistently saved recipe categories we track at New
Healthy Curation and after going through dozens of
versions to find what actually works, this is the
combination we keep coming back to.

The difference between a burrito bowl that genuinely
satisfies and one that leaves you reaching for
something else an hour later comes down to three
things: properly seasoned chicken with an actual crust
on it, rice that has been flavored rather than just
cooked, and beans that have been warmed with garlic
and cumin instead of spooned cold from the can. Each
element matters on its own. Together they make
something that tastes like a fifteen dollar bowl from
a restaurant except you made it in twenty-five
minutes at home.

If you have been looking for a healthy dinner that
does not feel like a compromise, we suggest giving
this one a proper try this week.

Why This Bowl Actually Works

The secret isn’t anything fancy. It’s layering flavors at each step instead of dumping everything together at the end.

The chicken gets a proper spice rub and actual time in the pan to develop a crust. The rice gets cooked with lime juice and cilantro stirred in at the end. The black beans get warmed with a little garlic and cumin instead of just being spooned cold from the can. Each element is doing its own thing, and when they all come together in the bowl, it tastes like something you’d pay fifteen dollars for.

A few things worth knowing before you start:

  • Chicken thighs over breasts every single time. They stay juicy even if you accidentally leave them on too long, and they have more flavor. Trust me on this one.
  • Don’t skip resting the chicken before slicing. Even five minutes makes a difference in how juicy it stays.
  • The corn is optional but not really. Charred corn (even from a frozen bag, quickly pan-fried until it gets some color) takes this from good to really good.

What You’ll Need

For the Chicken:

  • 500g boneless chicken thighs
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

For the Cilantro Lime Rice:

  • 1 cup long grain white rice
  • Juice of 1 lime
  • Small handful of fresh cilantro, chopped
  • 1/2 teaspoon salt

For the Bowl:

  • 1 can black beans, drained and rinsed
  • 1/2 teaspoon cumin
  • 1 clove garlic, minced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream or Greek yogurt for topping
  • Fresh lime wedges to serve
  • Hot sauce, if you like heat

How I Make It

Step 1: Season and cook the chicken. Mix all the spices together in a small bowl, then rub them all over the chicken thighs. Heat olive oil in a skillet over medium-high heat. Add the chicken and let it cook without moving it for about 5-6 minutes until the underside gets a proper golden crust. Flip and cook another 4-5 minutes. Let it rest on a cutting board for 5 minutes, then slice it thin.

Step 2: Cook the rice. Cook the rice however you normally do. While it’s still hot, stir in the lime juice, chopped cilantro, and salt. That’s it. It sounds too simple but the lime and cilantro turn plain white rice into something you actually want to eat.

Step 3: Warm the black beans. In a small saucepan over medium heat, add a tiny drizzle of olive oil and the minced garlic. Let the garlic soften for about 30 seconds, then add the black beans and cumin. Stir and warm through for 3-4 minutes. Season with a little salt.

Step 4: Char the corn. If you have time, throw the corn in a dry hot pan for 3-4 minutes, stirring occasionally, until you get some dark spots. This step adds a slightly smoky sweetness that makes a real difference. Skip it if you’re in a rush.

Step 5: Build the bowl. Start with a base of cilantro lime rice, then add the black beans to one side. Layer the sliced chicken over the top. Add the corn, cherry tomatoes, and avocado slices. Finish with shredded cheese, a spoonful of sour cream or Greek yogurt, a squeeze of fresh lime, and hot sauce if that’s your thing.

Meal Prep Notes

This bowl was practically designed for meal prep. The chicken, rice, and beans all store well separately in the fridge for up to 4 days. Keep the avocado, tomatoes, and toppings separate until you’re ready to eat so nothing gets soggy. Reheat the chicken, rice, and beans together, then add the fresh toppings right before eating. It tastes almost as good on day three as it does fresh.

If you want to bump up the protein even more, add a soft-boiled egg or a handful of edamame. Both work surprisingly well in this bowl.

A Note on Making It Your Own

This recipe is genuinely hard to mess up, which is
part of why it keeps showing up in people’s weekly
rotations. Swap the chicken for shrimp (3 to 4 minutes
per side), use cauliflower rice for something lower
carb, or add pickled red onions if you have them
every variation works because the base formula is
solid.

Well-seasoned protein, properly flavored rice, warm
beans, fresh toppings. Get those four right and
everything else is just personal preference.

Try it this week and let us know in the comments what
you changed we are always looking to update this
guide based on what people are actually making.
